Osso buco is a cut of the beef shank. The bone is full of rich marrow which when cooked low and slow allows for it to melt out and enrich the flavor of the meat around it. It's best seared on all sides, then cooked low and slow with stock/red wine and vegetables. Serve over rice, polenta or grits for a hearty dish that will have everyone coming back for more.
